  1. In a saucepan, heat 2 cups water with all remaining ingredients to a boil. Melt the salt and sugar. Let cool.
  2. Place the cooled liquid in a container large enough to hold the turkey. Add more cold water to total 1 gallon. (Make adequate brine so that the turkey is completely submerged and covered with liquid in the container.) Place the turkey in the cold brine. Cover and refrigerate for 12 to 24 hours.
