  1. Prepare a rice side dish and the cream sauce, set aside to serve as soon as the fish is cooked.
  2. Cut the fish pieces and sprinkle with blackening spice. Let marinate for 5 minutes. In a heavy skillet, add the olive oil over high heat. Place the fish in the pan and cook quickly allowing each side to “blacken”. You want to achieve a crispy outside crust and moist cooked fish inside.
  3. On small plates, place an individual serving of brown rice, then the crispy fish bites. Top with the Garlic Cream Sauce. Serve immediately.
Recipe Notes

For this recipe, we used ¼ lb. salmon and ¼ lb. Thresher shark.  Some fishmongers offer a combination of fishof mixed types at a lower price and would be a great option for this recipe.
