Chicken Satay
  1. Prepare the chicken. In a glass bowl, combine all ingredients. Mix completely and refrigerate for up to 4 hours.
  2. Preheat a cast iron flat top or skillet on high heat. Skewer the marinated chicken. Place on the hot cast iron and cook until browned on one side, then turn to cook through. Note: the skewered chicken can be cooked on a grill, but we prefer the cast iron.
Spicy Peanut Sauce
  1. Place the ingredients in a mini-Cuisinart or blender. Process until smooth and completely blended.
