- 1/2 lb. fish fresh, cut into 1” pieces
- 1 tbsp. blackening spice see our blackening spice mix recipe
- 3 tbsp. olive oil
- Garlic Cream Sauce see recipe

- Prepare a rice side dish and the cream sauce, set aside to serve as soon as the fish is cooked.
- Cut the fish pieces and sprinkle with blackening spice. Let marinate for 5 minutes. In a heavy skillet, add the olive oil over high heat. Place the fish in the pan and cook quickly allowing each side to “blacken”. You want to achieve a crispy outside crust and moist cooked fish inside.
- On small plates, place an individual serving of brown rice, then the crispy fish bites. Top with the Garlic Cream Sauce. Serve immediately.
Recipe Notes
For this recipe, we used ¼ lb. salmon and ¼ lb. Thresher shark. Some fishmongers offer a combination of fishof mixed types at a lower price and would be a great option for this recipe.
