  1. Preheat oven to 425 degrees F.
  2. In a bowl, mix 1/4 tsp. each of the salt and pepper, melted butter and Sriracha. Reserve a 1/4 C of this mixture for serving.
  3. In another bowl, mix the Panko and olive oil.
  4. Coat a shallow baking pan with cooking spray. Insert a rack into the pan, then place the salmon filet skin side down in the pan. Sprinkle 1/4 tsp. each of salt and pepper on the fish, then slather the remaining butter and Sriracha mixture over it. Now spread the Panko/oil mixture on top to cover.
  5. Roast in the oven for 15 to 25 minutes, depending on thickness of the fish. The Panko coating will be golden brown and fish cooked through.
  6. Serve with the reserved sauce.
