  1. Mix the spice rub ingredients completely. Place the turkey breast in a zipper plastic bag and rub the spice mix into the breast meat and under the skin. Refrigerate for up to 24 hours.
  2. Set up a charcoal grill for indirect grilling with a disposable foil drip pan placed below the roasting turkey. When the coals are ready, place the turkey breast on the grate, away from direct heat. Add mesquite smoking wood chips and cover the grill. Cook the turkey breast to at least 165 degrees F internal temperature, about 2 hours.
  3. Remove from the grill, let stand for 20 minutes and then carve for serving. Note: the rubbed turkey breast can be roasted in a standard oven at 350 degrees F, 20 minutes per pound.
