  1. Heat some of the oil in a large heavy pot. Add as much fresh spinach as will fit in the pot and wilt down over medium heat. Remove the cooked spinach and hold in a bowl, repeat as many batches as necessary to cook all of the spinach. Add oil as necessary.
  2. Add a little more oil and the garlic. Heat over medium heat for a few minutes. Add the cream cheese, Serrano peppers, cream, Parmesan and seasonings. Heat through and mix completely. Add the spinach back to the pot and mix completely. Re-season as necessary. Serve hot.
