Hawaiian Poke Platter Mise en Place
- 1 Recipe Poke see below
- 1 Recipe Potato Mac see recipe in index
- 12 wonton chips fried wonton wrappers
- 1 handful Macadamia nuts
- 1 jalapeno sliced, add cilantro and Sriracha
- 6 cilantro leaves
- 6 dots Sriracha dot on cilantro
- 1 avocado sliced, sprinkled with Furikake
- 3 pieces spicy dried pineapple or other dried fruit
- 3 tbsp spicy mayonnaise sauce
- 3 tbsp poke sauce reserved
- 1 cucumber sliced
Shoyu Poke
- 1/4 lb. ahi sushi grade
- 3 thin slices red onion
- 1 tbsp fresh ginger grated on microplane
- 2 green onions (scallions) 1" pieces
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp Sriracha
- 2 tsp sesame seeds toasted
- 1 pinch Hawaiian Sea Salt

HawaiiPoke Platter Mise en Place
- Prepare individual ingredients in advance. When ready to serve, assemble the ingredients in artful arrangement on board, platter or tray.
Shoyu Poke
- Frozen sushi grade ahi is readily available from fine seafood purveyors. Defrost and cut ahi in desired bite sized pieces. We prefer 1/4" cubes.
- Combine Shoyu sauce ingredients in a bowl and mix. Reserve half the sauce for dipping. Add the cubed ahi and mix gently. Serve immediately or refrigerate for up to 24 hours.
