  1. Heat a heavy pan coated with oil spray. Add 1/2 T oil to coat the bottom of the pan. Add the beaten egg and cook for a couple minutes. Season with salt and pepper, to taste. Turn the egg over and cook the other side. Remove the cooked egg from the pan and set aside. When cool, chop the egg into 1-inch dice. Set aside.
  2. Add more oil to coat the bottom of the pan. On medium heat, add the onion and bell pepper. Cook for 3 minutes. Add the garlic and cook a minute more. Add the ham and heat through. Add more oil as needed to keep the cooking ingredients from sticking. Increase the heat.
  3. Fluff the cooked rice with a fork and add to the hot pan. Stir vigorously to fry the rice. Add oil as needed. Add the green onion and peas to heat through. Stirring continuously, add the soy sauce and mix through. Add the cooked egg and incorporate. Remove from heat and serve.
