Pizza Dough
  1. Place the yeast, water, salt and a spoonful of flour in a bowl. Mix to incorporate. Let rest in a warm place until the yeast activates and begins to bubble.
  2. Once the yeast is bubbling up, slowly mix in the flour with a wooden spoon. Turn out onto a large board. Knead for 15 minutes.
  3. Place the kneaded dough back into the bowl. Cover with plastic wrap. Place in a warm place to rise for about 3 hours.
  4. When ready, divide the risen dough into two balls. Stretch each dough ball into 12" rounds.
Pizza Sauce
  1. Pre-heat the oven to 300 degrees F. Wash tomatoes (homegrown or farmers market crop preferred).
  2. Drizzle olive oil on the bottom of the pan, then spread the tomatoes and garlic in one layer. Salt the entire pan of tomatoes and garlic.
  3. Place in the heated oven and roast slowly until skins are browned and pulling away from the tomato flesh. About one hour.
  4. Remove the skin, stems and cores from the tomato flesh. Place the roasted tomatoes, garlic and juices in a bowl and use an immersion blender to break down to a smooth sauce. A blender may be substituted, but do not over blend.
  5. Any extra sauce may be frozen for several months.
Pizza Toppings
  1. Prepare toppings to taste. We prefer a simple pizza with mozzarella and pepperoni.
Pizza
  1. Preheat the Ooni Pizza Oven to 900 degrees F, so that the pizza stone is heated through to char the pizza crust. See manufacturers instructions.
  2. Stretch to dough balls to 12" rounds. Prepare a pizza peel with lots of flour, so the pizza will not stick when thrusting it into the pizza oven.
  3. Add a thin coat of pizza sauce, mozzarella cheese and pepperoni.
  4. Let the oven cool down a bit before inserting the pizza. We cook our pizza once the oven is about 750 degrees F.
  5. Once the pizza is inserted, let it cook in one position for 10 seconds, then rotate with long tongs. Continue rotating until all edges are blistered and slightly blackened.
