  1. Place the balsamic vinegar in a small saucepan. Bring to boil and reduce to simmer on medium heat for about 15 minutes. The vinegar will reduce by half to a thick syrup.
  2. Trim watermelon bites from the rind and cut into 1" cubes
  3. Plate individual servings with a stack of watermelon cubes in the middle, surrounded by bite-size chunks of cream cheese and tomatoes.
  4. Drizzle the balsamic vinegar reduction over the ingredients, then sprinkle the pistachios around each plate.
