- 4 3 oz. salmon filets, skin removed
- 2 tsp. blackening spice see recipe index
- 2 pats butter to coat the skillet
- 8 tortillas corn or flour, warmed
- 1/4 head cabbage sliced thinly
- Bob's Chipotle Tartare Sauce see recipe index

- Pat the salmon filets dry and coat both sides with the blackening spice. Heat a cast iron skillet on high heat, add butter to melt and then place the salmon in the skillet. Cook the salmon quickly on high heat, 3 to 7 minutes on the first side (depending on thickness), then turn and blacken the second side. Remove and cover with foil to keep warm.
- Assemble the tacos by placing flaked pieces of salmon in a tortilla, top with cabbage and chipotle tartar sauce.
