  1. Blend first six ingredients in a mini food processor until smooth.
  2. Add crumbled blue cheese and process to your desired consistency. (We prefer it to be semi-chunky.)
  3. Taste for seasoning, then add salt and pepper.
  4. Pour potato chips in a bowl. Drizzle the blue cheese sauce over the chips. Sprinkle the scallions over the top and serve.
  5. Be prepared to make more.
