The best green chili burrito we have ever had was at a drive-through called Aliberto’s in Holbrook, Arizona. Unexpected, yes. Maybe that adds to the memories in our mind of the perfect burrito: meat, green chili and flour tortilla. It was an unexpected treasure we found on our RoadTrip.
MAPPING THE DAY
RoadTrips lead to unplanned experiences. A pit stop, gas fill-up or intriguing signage for a quick detour can deliver unexpected treasures. We had been driving for a couple hours after we left Sedona. We felt so refreshed from our time there. Beautiful scenery, wonderful cuisine and a swift fall down Slide Rock were a great start to our RoadTrip.
Now we were headed to Albuquerque. We planned to take a quick detour through the Petrified Forest, so we pulled off the highway in Holbrook for gas and a quick lunch.
LOCAL STORY
I had been talking about Green Chili for months. My travel partners probably thought I was exaggerating about the attributes of that one dish, but I simply could not wait to get my first order of it in New Mexico. After we filled the tank, we noticed a drive-through right next door. The Aliberto’s menu listed all kinds of Southwest fast food: enchiladas, tacos, tostadas, tortas and burritos. The menu item popped out at me like a lightening bolt: Green Chili Burrito. DONE.

As we opened the paper-wrapped burritos in our laps, the aroma wafted through the car. Ahhh, green chile.
GREEN CHILI CHICKEN OR PORK
Over the years, we have discounted the benefits of using a crockpot. But this dish is so easy and results are simply devine. Our crockpot has a browning setting too, which eliminates the need for starting in a skillet.
