  1. Heat the oil in a heavy pot and add the onion. Saute for 10 minutes until soft, then add the garlic, oregano and Italian spice blend. Saute another 4 minutes. Open the can of tomatoes and squeeze each tomato in your hand over the pot and drop the crushed tomato into the pot. Add the juice from the can as well. Add a tsp each of salt and pepper. Simmer for 45 minutes.
  2. After simmering, remove from heat . Pulse a hand blender in the sauce to render a smooth consistency. (Do not over process.) Salt and pepper to taste.
  3. For a perfect marriage of sauce and pasta, heat a serving of sauce in a skillet. Add cooked homemade pasta in the sauce and heat for a few moments. Stir constantly so the sauce just covers every surface of the pasta. Serve on a plate and top with a small sprinkle of good quality Parmesan cheese.
