  1. Wash the potatoes and bake at 350 degrees F for about an hour until done. Remove from the oven and let cool.
  2. Cut the potatoes in half and spoon out the white flesh, leaving the potato skin in tact.
  3. In a bowl, mix the potato with butter, cream cheese, sour cream, Hatch chile, salt and pepper to incorporate. If the mixture is dry, add more sour cream.
  4. Now spoon the mixture back into the potato skins. Sprinkle tops with Parmesan cheese. Place back in the oven to warm through and brown on the top (30 to 45 minutes.)
