The RoadTripFlavors version of Fancy Cheese Puffs, inspired by our evening in Covent Garden in London, is easy and will impress your party guests. Note: Be sure to take the pan off of the heat before adding the eggs. One of our attempts was a flop because our eggs were over-heated.

  1. Heat the oven to 350 degrees F. Prepare a large sheet pan with a SilPat.
  2. In a saucepan, add milk, butter and salt. Bring to a boil over medium high heat. Add the flour and cayenne pepper. Stir to incorporate and cook for 7 minutes. Remove from heat and cool for about 5 minutes.
  3. Add one egg and stir to incorporate. Add the second egg and incorporate completely. Add the cheese, but reserve 2 tbsp. for topping the cheese puffs.
  4. Place the dough in a heavy plastic bag. Snip the end of the bag and pipe 1-inch balls (about 1 1/2 tbsp. each) onto the prepared sheet pan. Sprinkle reserved cheese on top of each ball.
  5. Place in the preheated oven and back until puffy and browned (about 30 minutes). Serve warm with cocktails, wine or champagne.
