  1. Preheat the oven at 350 degrees F and bake the potatoes until cooked through (about an hour)
  2. Set aside to cool slightly. When able to handle, cut each potato in half and scoop out the potato leaving a skin cup. Place the cups on a baking sheet. Salt and pepper the potato skin cups.
  3. In a bowl, mash the potato with sour cream, blue cheese and margarine. Add more of any ingredients to develop a tasty mash consistency. Salt and pepper to taste. Fill each skin cup with potato mixture. Top with Parmesan cheese. Bake in a 350 degree oven for 30 to 45 minutes until the potato tops are golden brown. Serve immediately.
