  1. Place a cookie sheet or flat pan lined with parchment paper in the freezer to chill.
  2. Place a block of vanilla ice cream on a cutting board. With a serrated knife warmed in a vessel of hot water and wiped dry, cut 1 1/2″ cubes of ice cream. Place a popsicle stick in the cut ice cream portions and place them on the pan in the freezer. Refreeze for at least 30 minutes.
  3. Melt the chocolate and oil in a double boiler and heat to a perfect 118 degrees F. A foolproof method is to fill a crock pot with water and heat on high. Once the water is hot, place Mason jars filled with chocolate chips and oil in the water bath and heat for 30 minutes. Stir to a smooth texture.
  4. Prepare the toppings in shallow dipping bowls.
  5. Working quickly, remove 1 portion of ice cream from the freezer, dip it in the melted chocolate and roll it in a topping. Place back in the freezer or eat it immediately. Let the chocolate reheat and repeat.
