Ingredients
- 1 1/2 lb. salmon filet, with skin
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 4 tbsp. butter melted
- 1/4 cup Sriracha
- 1/3 cup Panko breadcrumbs
- 1 tbsp. olive oil

- Preheat oven to 425 degrees F.
- In a bowl, mix 1/4 tsp. each of the salt and pepper, melted butter and Sriracha. Reserve a 1/4 C of this mixture for serving.
- In another bowl, mix the Panko and olive oil.
- Coat a shallow baking pan with cooking spray. Insert a rack into the pan, then place the salmon filet skin side down in the pan. Sprinkle 1/4 tsp. each of salt and pepper on the fish, then slather the remaining butter and Sriracha mixture over it. Now spread the Panko/oil mixture on top to cover.
- Roast in the oven for 15 to 25 minutes, depending on thickness of the fish. The Panko coating will be golden brown and fish cooked through.
- Serve with the reserved sauce.
