Ingredients
- 2 eggs beaten
- 3 tbsp. club soda
- 2 tbsp. butter melted
- 1/2 cup Matzo Meal
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 8 cups chicken broth
- 2 carrot peeled and cut into bite-sized rounds

Instructions
- Mix all ingredients, except broth and carrot, and chill in the refrigerator for four hours.
- After chilling, form into golf ball size balls.
- In a large pot, bring the chicken broth to a boil and reduce to simmer. Add the chilled balls and carrots. Poach in simmering chicken broth for 25 to 30 minutes.
