Ingredients
Crust
- 2 cups all purpose flour
- 1/2 cup brown sugar firmly packed
- 1 cup butter unsalted, softened, 2 sticks
Cheesecake Filling
- 3 packages cream cheese softened, 8-ounce
- 3/4 cup sugar
- 2 tsp. vanilla extract
- 3 large eggs
Streusel Topping
- 1 cup brown sugar firmly packed
- 1 cup all purpose flour
- 1/2 cup oats quick cooking
- 1/2 cup butter salted, softened, 1 stick
- 1/2 cup caramel topping

Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press evenly into a glass 13x9 baking pan lined with non-stick aluminum foil (if you don’t have non-stick foil, grease the foil with cooking spray). Bake 15 minutes or until lightly browned.
- Meanwhile, in a large bowl, beat cream cheese, sugar, and vanilla with an electric mixer at medium speed until smooth. Then add eggs, 1 at a time until combined. Pour over warm crust.
- In a medium bowl, stir together chopped apples, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.
- In another medium bowl, mix all of the streusel topping ingredients until thoroughly combined and crumbly.
- Sprinkle streusel topping over apples. Bake 40-45 minutes, or until filling is set. Let cool completely. Drizzle evenly with caramel topping. Keep refrigerated until ready to eat. Serve cold.
