Ingredients
Barbecue Shrimp
- 1 pound shrimp 16 - 20 count, peeled and de-veined
- 4 tbsp Barbecue Seasoning recipe follows
- 3 cloves garlic chopped
- 2 tbsp Sherry wine
- 2 tbsp apple cider vinegar
- 4 tbsp tomato juice
- 1/4 cup green onion trimmed and cut into 1" long
- 2 tbsp butter

Instructions
- Place the shrimp in a glass bowl and add the Barbecue Seasoning. Coat the shrimp with the seasoning on all sides. Let it marinate for a few minutes.
- Now begin cooking the grits according to the package directions. (it should cook about 30 minutes.)
- Heat a heavy pan (we prefer cast iron) and add olive oil. Once hot, add the spice-covered shrimp. Cook on one side to a dark golden brown. Turn the shrimp and add the garlic to the pan. Once the shrimp is cooked through, remove to a plate and keep warm as the sauce is prepared.
- Remove the pan from the heat and add the Sherry wine. (The wine could flare.) Return to heat and add apple cider vinegar. Add the tomato juice and reduce slightly. Add the green onions and combine all the ingredients. Remove from the heat and add the compound butter, swirling it into the sauce as it melts.
- Add the cheddar cheese to the cooked grits. Stir and place portions on individual serving dishes.
- Stir and place portions on individual serving dishes. Place a portion of shrimp to each plate over the grits. Drizzle sauce over the shrimp and grits. Serve immediately.
