Second in a series, here is another Tonight’s Menu suggestion:
Big Bowl of Red Chili Garnishes: Diced Red Onion, Sour Cream, Shredded Cheddar Cheese Tossed Green Salad Jalapeño Cornbread Muffins Honey
It is cool, drizzly and overcast in Southern California this week. Yes, it pales in comparison to the cold blast in the middle of the U.S. this week, but still it is cool to us. With the gloomy weather, a potage for dinner sounded comforting. So, we pulled an archived blog recipe for our Bowl of Red Chili and tweaked it a bit. This version is fairly mild, so add Tabasco, cayenne pepper or fresh diced jalapeños if you prefer. Then we made a side dish of Jalapeño Cornbread Muffins. Be sure to serve honey to dip each muffin morsel. Add a favorite tossed green salad and you have a complete meal!
