  1. Rinse and completely dry the strawberries. (Water is chocolate’s mortal enemy.)
  2. Prepare a sheet tray lined with parchment or wax paper, if that isn’t available, plastic wrap will do.
  3. In the bottom of a double broiler, bring about an inch of water to a boil. Once it boils, turn the heat off. Place the white chocolate in the top of the pot over the water and let sit until shiny. Stir with a spatula until all the chips are dissolved. If it needs more melting, turn the heat back on to low/simmer for a couple minutes.
  4. Dip two thirds of the strawberry into the chocolate and swirl until covered. Tap excess chocolate off.
  5. In a dish filled with blue sprinkles, dip the bottom one third of chocolate covered strawberry and swirl to cover.
  6. Place strawberries on the parchment lined sheet tray and place in the refrigerator until set.
