Ingredients
- 1/4 cup soy sauce
- 1 lb. asparagus fresh, tiny, washed and trimmed of tough stalk (fresh whole green beans may be substituted)
- 1 cup flour seasoned with 1 tsp. each salt, pepper and garlic powder, or to taste
- 2 eggs beaten
- 1 cup Panko breadcrumbs
- cooking spray
- 2 tbsp. olive oil
- 3 tbsp. Parmesan cheese

Instructions
- Place soy sauce in a shallow pan add the asparagus to marinate for 15 minutes.
- In the meantime, prepare a three part dredging station of seasoned flour, beaten egg and Panko bread crumbs.
- Preheat oven to 425 degrees F. Lightly coat at sheet pan with cooking spray, then add a 2T olive oil to the bottom of the pan.
- After the asparagus has marinated, add 3 tbsp. of the soy sauce to the beaten egg for additional layer of flavor. Mix well.
- Dredge each stalk of asparagus in seasoned flour, then egg mixture, then Panko to coat and place on the baking sheet. Do not overcrowd the sheet pan. Each stalk needs room to crisp in the oven.
- Roast for 15 minutes until browned and tender. Place in a shallow serving dish and sprinkle with a light coat of Parmesan cheese.
- Serve immediately with K.O.’s Homemade Ranch Dip
