Avocado, Fresh Corn & Black Bean Salad

Ingredients

  • 1 avocado ripe, cut into bit-sized pieces
  • 1 ear corn blackened on the grill, then cut off the cob
  • 1 can beans black, 14 oz., drained and rinsed
  • 1 tomato chopped
  • 1/4 cup onion white, finely chopped
  • 1/4 cups cilantro finely chopped (optional)
  • 1 jalapeño pepper seeds removed and chopped finely
  • 1/4 cup vinaigrette
  • 1 tbsp. lime juice
  • 3 tbsp. jalapeño pepper pickled
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a serving bowl. Season to taste. Serve at room temperature.
