Sustainable and Slow in Seattle

MAPPING THE DAY

Downtown Seattle is a great place to hit the road on foot.  There are hotels, restaurants, shopping and attractions all within walking distance for a wonderful RoadTrip weekend.  Start with a walk through Pike Place Market and take in the brightly colored fresh fruits, vegetables and flowers.

You will wish for a kitchen to cook in that evening.  There are lots of coffee and lunch venues to choose from and then continue up into downtown for shopping and views of the Puget Sound area. 

LOCAL STORY

Seattle restaurants and local farmers have embraced the sustainable and slow food movement much like the California Bay Area.  The robust local seasonal ingredients are honored by chefs with fresh offerings.

A business trip to Seattle was capped off for me by an invitation from a vendor to dinner at Urbane Restaurant at Hyatt at Olive 8.  I am usually not inclined to select a hotel restaurant, but Urbane is definitely a great choice.

A contemporary and simply elegant dining room is charged by high energy diners.  Even on a week night, the restaurant is packed.  Our table of eight was attended by a team of wait staff.  While it was noisy at times, the environment is invigorating.

The fresh local ingredient menu is enticing throughout.  I started with Roasted Beet and Chevre Salad.  It was so memorable that I came home and made it my own.
