- 1/2 cup balsamic vinegar
- 1/2 watermelon seedless
- 12 tomato cherry, quartered
- 1/2 cup cream cheese whipped preferred
- 1⁄4 cup pistachio nuts roasted, salted, rough chopped

- Place the balsamic vinegar in a small saucepan. Bring to boil and reduce to simmer on medium heat for about 15 minutes. The vinegar will reduce by half to a thick syrup.
- Trim watermelon bites from the rind and cut into 1" cubes
- Plate individual servings with a stack of watermelon cubes in the middle, surrounded by bite-size chunks of cream cheese and tomatoes.
- Drizzle the balsamic vinegar reduction over the ingredients, then sprinkle the pistachios around each plate.
