Ingredients
- 1/4 cup olive oil
- 2 lbs. carrots young , scrubbed (not peeled)
- 2 tbsp. agave syrup maple syrup may be substituted
- 1 tbsp. Sriracha optional
- salt and pepper

Instructions
- Preheat oven to 350 degrees F.
- On a large sheet pan, pour the olive oil to coat the surface. Toss the carrots onto the pan and roll in the olive oil. Salt and pepper lightly.
- Roast the carrots until almost tender, about 20 to 30 minutes.
- In a bowl, mix the agave syrup and Shiracha. Drizzle mixture over the roasted carrots to cover evenly. Place back in the oven for 5 minutes to caramelize.
- Carrots may be served hot or may be held and served room temperature.
