Ingredients
- 5 radishes halved and sliced
- 10 pickled jalapeños
- 1/4 cup red onion diced
- 3 pieces cheese Oaxacan, pulled into thin strips and cut to 2"
- 1/4 cup cilantro stems removed and chopped
- 3 tbsp. apple cider vinegar
- 1/2 cup olive oil
- salt and pepper to taste
- 4 - 6 slices tomato vine-ripened, sliced thick

Instructions
- Place all ingredients, except tomatoes, into a large mixing bowl. Toss the mixture with a spoon and let stand for 10 minutes. Meanwhile, salt and pepper the tomatoes. To plate, alternate tomatoes with the mixture to create stacks. Serve immediately.
Recipe Notes
Mozzarella or string cheese may be substituted for Oaxacan cheese
