Ingredients
Chipotle Cream Sauce
- 1 tbsp vegetable oil
- 1/2 cup onion diced
- 1/2 tsp salt
- 14.5 oz. can diced tomatoes
- 2 whole chipotle peppers in adobo
- 1 cup sparkling Rose wine
- 1/3 cup heavy cream
- 1 tbsp butter
- 1 tsp. chicken base
Carne Asada Tacos
- 2 lbs. carne asada flap meat or skirt steak
- 3 tbsp taco seasoning see link below
- 1 tbsp Kosher salt
- 8 corn tortillas or flour
- 1 cup pico de gallo see link below
- 1 cup chipotle cream sauce
- 4 tbsp cillantro chopped for garnish

Chipotle Cream Sauce
- Heat a heavy pan on medium with vegetable oil. Add the diced onion and sauce until soft and cooked through.
- Add the diced tomato and chipotle peppers with adobo sauce. Pour wine to cover. Heat to simmer uncovered for 90 minutes.
- The cooking liquid will reduce by 50%. Let cool and place in a blender. Chipotle peppers may be removed now or may be blended into the sauce depending on desired spice heat. Blend to smooth texture and return to the pot.
- Now add the cream, butter and chicken base. Heat through and taste for salt. Add more salt if desired. Set aside for taco assemblage.
Carne Asada Tacos
- While the chipotle cream sauce is simmering, place the flap meat in a large bowl or zipper sealed bag. Cover both sides of each piece of meat with taco seasoning and salt (if using salt-free homemade version). Let stand in the refrigerator until ready to grill.
- Heat the outdoor grill. Once heated to high temperature, place the meat directly on the grates. Quarter turn for grill marks on both sides. Cook to desired doneness (we prefer medium rare).
- Place on a cutting board. Cut grilled meat into bite-sized pieces.
- Now heat a skillet and add bite-sized meat, pico de gallo and chipotle cream sauce. Stir together and heat through.
- Heat the corn tortillas on the grill or stove. Place tortillas on a platter, top with meat meat mixture and garnish with cilantro. Serve with rice and beans, as well as guacamole, if desired.
