Ingredients
- 1 shallot chopped finely
- 3 cloves garlic chopped finely
- 1 tbsp. olive oil
- 1 cup heavy cream
- 1 tsp. lemon zest grated
- ½ tsp. sea salt or to taste
- ¼ tsp. cayenne pepper

- Add the oil to a small saucepan and place over low heat. Add the shallot and garlic and sweat for 10 to 15 minutes so that the ingredients are tender and translucent. Do not brown.
- Add the cream, lemon zest, salt and cayenne. Bring to a soft boil, reduce heat and simmer uncovered for about 5 minutes. The sauce will be thick and luxurious.
