  1. Add the oil to a small saucepan and place over low heat. Add the shallot and garlic and sweat for 10 to 15 minutes so that the ingredients are tender and translucent. Do not brown.
  2. Add the cream, lemon zest, salt and cayenne. Bring to a soft boil, reduce heat and simmer uncovered for about 5 minutes. The sauce will be thick and luxurious.
