- sourdough bread cut into triangles
- 3 tbsp. olive oil
- 1 tsp. garlic powder
- 2 tbsp. Parmesan cheese

French Onion Soup
- In a heavy pot, heat the butter and oil over medium heat. Add the sliced onion and salt, stir and cook uncovered for 45 minutes. The onions will reduce and caramelize to a golden brown.
- Sprinkle the flour and stir into the onion mixture to absorb the oil in the pan. Heat through for 5 minutes to cook out the flour taste. Pour the stock into the pot and stir completely. Simmer for another 20 minutes.
- Serve in large soup bowls with Parmesan crustini (Recipe follows).
Parmesan Crustini
- On a large baking sheet, cover the pan with a thin layer of olive oil. Place the sourdough triangles onto the pan and coat both sides with oil. Sprinkle garlic powder and Parmesan cheese on each piece. Bake in a 350 degree oven for 20 minutes or until crispy throughout each piece.
