French Onion Soup
  1. In a heavy pot, heat the butter and oil over medium heat. Add the sliced onion and salt, stir and cook uncovered for 45 minutes. The onions will reduce and caramelize to a golden brown.
  2. Sprinkle the flour and stir into the onion mixture to absorb the oil in the pan. Heat through for 5 minutes to cook out the flour taste. Pour the stock into the pot and stir completely. Simmer for another 20 minutes.
  3. Serve in large soup bowls with Parmesan crustini (Recipe follows).
Parmesan Crustini
  1. On a large baking sheet, cover the pan with a thin layer of olive oil. Place the sourdough triangles onto the pan and coat both sides with oil. Sprinkle garlic powder and Parmesan cheese on each piece. Bake in a 350 degree oven for 20 minutes or until crispy throughout each piece.
