- vegetable oil
- 2 pounds fish fresh, cod or halibut
For Dredging the Fish
- ¼ cup flour
- ½ tsp. salt
- ½ tsp. black pepper
- ¼ tsp. cayenne pepper
For Beer Batter
- 1½ cup flour
- 1 tbsp. baking powder
- 1 bottle beer Guinness
- 1 tsp. garlic powder
- 1 tsp. salt
- 1 tsp. black pepper

Instructions
- Heat the oil in a deep pan to 350 degrees F. Use a thermometer to monitor the proper heat. Adjust as necessary.
- Combine the dredging ingredients in a flat dish and mix completely.
- Combine the batter ingredients in a large bowl and mix completely.
- Cut the fish into individual serving pieces. Dredge first, then immerse in batter.
- Shake the excess batter and gently place the fish into the frying oil. Fry, turning gently, for about 7 minutes.
- For ease, cook frozen French fries to serve with the fish.
