The RoadTripFlavors version of Fancy Cheese Puffs, inspired by our evening in Covent Garden in London, is easy and will impress your party guests. Note: Be sure to take the pan off of the heat before adding the eggs. One of our attempts was a flop because our eggs were over-heated.
Ingredients
- 1/2 cup milk
- 3 tbsp. butter
- 1/4 tsp. course sea salt
- 3/4 cup flour
- 1/4 tsp. cayenne pepper
- 2 egg
- 3/4 cup cheese Gruyere or sharp cheddar

- Heat the oven to 350 degrees F. Prepare a large sheet pan with a SilPat.
- In a saucepan, add milk, butter and salt. Bring to a boil over medium high heat. Add the flour and cayenne pepper. Stir to incorporate and cook for 7 minutes. Remove from heat and cool for about 5 minutes.
- Add one egg and stir to incorporate. Add the second egg and incorporate completely. Add the cheese, but reserve 2 tbsp. for topping the cheese puffs.
- Place the dough in a heavy plastic bag. Snip the end of the bag and pipe 1-inch balls (about 1 1/2 tbsp. each) onto the prepared sheet pan. Sprinkle reserved cheese on top of each ball.
- Place in the preheated oven and back until puffy and browned (about 30 minutes). Serve warm with cocktails, wine or champagne.
