- 1 1/4 cups oats
- 1 cup all purpose flour
- 1/3 cup sugar
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 cup blueberries fresh

- Preheat the oven to 425 degrees. Spray a muffin tin with cooking spray.
- Combine the oats, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk together the milk, egg and vegetable oil. Stir into the dry ingredients until the the mixture is evenly moistened. Gently fold in the blueberries. Fill the cups 2/3 to 3/4 full.
- Bake for 20 to 25 minutes until golden and toothpick inserted comes out clean.
