Place a cookie sheet or flat pan lined with parchment paper in the freezer to chill.
Place a block of vanilla ice cream on a cutting board. With a serrated knife warmed in a vessel of hot water and wiped dry, cut 1 1/2″ cubes of ice cream. Place a popsicle stick in the cut ice cream portions and place them on the pan in the freezer. Refreeze for at least 30 minutes.
