Ingredients
- 4 tbsp. olive oil
- 2 lbs. spinach fresh, washed and dried
- 4 cloves garlic chopped finely
- 3 tbsp. cream cheese
- 4 serrano peppers pickled,de-seeded and chopped finely
- 1⁄2 cup heavy cream
- 1⁄2 cup Parmesan cheese
- 1⁄4 tsp. nutmeg freshly grated
- 1⁄4 tsp. salt taste and re-season
- 1⁄2 tsp. pepper

- Heat some of the oil in a large heavy pot. Add as much fresh spinach as will fit in the pot and wilt down over medium heat. Remove the cooked spinach and hold in a bowl, repeat as many batches as necessary to cook all of the spinach. Add oil as necessary.
- Add a little more oil and the garlic. Heat over medium heat for a few minutes. Add the cream cheese, Serrano peppers, cream, Parmesan and seasonings. Heat through and mix completely. Add the spinach back to the pot and mix completely. Re-season as necessary. Serve hot.
