The 2016 Fancy Food Show in San Francisco inspired us to source the best ingredients for this healthful Mediterranean side dish. We acquired quinoa from Bob’s Red Mill, goat cheese from Petaluma, kalamata olives from Greece, olive oil from California and produce from our local farmer’s market. Bon Appetit!
Ingredients
Quinoa
- 1 cup quinoa uncooked, prepared to package directions
Dressing
- 1/3 cup lemon juice
- 1 tbsp. balsamic vinegar
- 1/3 cup olive oil
- 1/4 tsp. garlic powder
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
Salad
- 1/2 large red onion diced very small
- 1 large green pepper diced very small
- 1/4 cup parsley chopped
- 1/4 cup green onion chopped
- 1/2 cup Kalamata olives chopped
- 1/2 cup goat cheese crumbled

Instructions
- Prepare the quinoa. For more flavorful quinoa, substitute chicken broth for water.
- In a large bowl, combine the quinoa, dressing and salad ingredients and stir to incorporate. Serve warm or chilled.
