Ingredients
- 2 tbsp. olive oil
- 1 cup all purpose flour
- 2 egg beaten with
- 2 tbsp. milk
- 1/2 cups breadcrumbs seasoned
- 1/2 cups saltine crackers pulverized
- 2 tbsp. House Spice Mix see recipe index
- 2 large yellow onion sliced 1/4-inch thickness and separated into rings

- Pre-heat the oven to 375 degrees F. Spray two large baking sheets nonstick cooking spray, then spread a thin coat of olive oil on the pan surfaces.
- Prepare a three-part dredging station: flour seasoned with House Spice Blend; egg/milk mixture; and seasoned bread crumbs combined with the saltine cracker crumbs.
- Dredge onion rings in flour to coat, then dip in the egg/milk mixture. Shake excess off, then dredge in the bread/cracker crumb mixture.
- Place in single layers on the prepared sheet pans. Coat the prepared onion rings with a thin layer of cooking spray.
- Place in the oven and bake until golden brown and crispy. About 30 minutes.
- Serve immediately.
