Ingredients
- 4 hamburger patties 1/3 lb. 80/20 ground beef
- salt and black pepper to taste
- 2 Hatch chiles roasted, skins and seeds removed
- 4 oz. cheese creamy Port Salut preferred, sliced
- 4 hamburger buns soft white preferred

Instructions
- Heat an outdoor grill. Season hamburger patties with salt and black pepper.
- Place patties on the hot grill. Cook for 3 minutes and rotate 90 degrees for nice grill marks. Grill of another 3 minutes.
- Now flip the burgers. Top with strips of Hatch chiles, to taste, then the cheese. You want the cheese to melt completely for ooey gooey goodness.
- In the meantime, toast the buns lightly. Once the cheese is melted assemble the hamburgers. Now dress the grilled burgers with Hatch Chile Aioli, lettuce and tomato. Serve immediately.
