  1. Heat an outdoor grill. Season hamburger patties with salt and black pepper.
  2. Place patties on the hot grill. Cook for 3 minutes and rotate 90 degrees for nice grill marks. Grill of another 3 minutes.
  3. Now flip the burgers. Top with strips of Hatch chiles, to taste, then the cheese. You want the cheese to melt completely for ooey gooey goodness.
  4. In the meantime, toast the buns lightly. Once the cheese is melted assemble the hamburgers. Now dress the grilled burgers with Hatch Chile Aioli, lettuce and tomato. Serve immediately.
