Monterey to Cambria, California
It had been many years since we traveled the California coastal highway from Monterey to Cambria: Big Sur. It is a 100-mile RoadTrip everyone should experience at least once.
We arrived in Monterey the night before our Big Sur excursion on a warm summer evening in June. The Holiday Inn Express near Cannery Row was a perfect respite for our short stopover. We had a wonderful evening meal at Schooners Coastal Kitchen located just a block from our hotel. And the Forbidden Rice side dish for seafood was memorable.
The nutty flavor of black rice, touted for its antioxidants, is highlighted with fresh blackened pineapple and tang of soy sauce and rice wine vinegar. Serve as a side dish. It's especially great with black pepper crusted and seared sushi-grade ahi.

Ingredients
- 4 servings Black Rice prepared according to package directions
- 3 slices pineapple fresh or canned
- 3 tbsp. soy sauce
- 1 tbsp. rice wine vinegar
- 1 pinch crushed red peppers to taste

Instructions
- Prepare the black rice according to package directions.
- Pre-heat outdoor grill or grill pan on high. Sear the pineapple slices on one side with blackened grill marks. Place on cutting board and chop into small pieces.
- In a mixing bowl, combine all ingredients. Serve as a side dish to fish or chicken.
