Ingredients
- 4 tbsp. olive oil
- 1 onion diced
- 3 cloves garlic minced
- 2 potato white, peeled and diced
- 3 cans chicken broth 15 oz. can
- 1 can tomato diced, 15 oz. can
- 2 sausage cooked, linguica, bratwurst or kielbasa, sliced
- 1 can beans cannellini, 15 oz. can
- 1⁄2 lb. kale black, washed, stemmed, bite-sized
- salt and pepper to taste

- In a large stockpot, heat the olive oil over medium and add the onion. Season with salt and pepper. Sauté for five minutes. Add the garlic and sauté three minutes more. Add the potatoes, then the chicken broth and tomatoes with juice. Bring to a boil then reduce to simmer until the potatoes are tender. Add the sausage, beans and kale. Simmer another 30 minutes until heated through and flavors have melded together. Taste and re-season.
