Fresh sea air, blue skies and a warm breeze welcomed us to Newport Beach in July. Our sole mission for the day was to celebrate our granddaughter, Emily, for her seventh birthday. It was just the three of us to explore the Orange County coast and pamper our girl. What a grand idea!

Ingredients
Creamy Avocado Salsa
- 1 large avocado ripe
- 1 7 oz. can salsa verde Herdez or other prepared
- 1/4 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. salt or to taste
The Grand Quesadilla
- 1 tbsp. vegetable oil
- 4 flour tortillas
- 2 cups Jack cheese grated, or use Pepper Jack

Creamy Avocado Salsa
- In a bowl, add 3/4 of the avocado and smash. Add the salsa verde and spices. Combine. Cube the remaining avocado and stir into the mixture to incorporate.
The Grand Quesadilla
- In a large non-stick skilled, add 1/4 of the oil and heat. Place one tortilla in the hot oil to slightly brown, then flip. Add 1/2 cup cheese and fold the tortilla over it. After it browns on one side, flip to brown the other side. Set aside to cool before cutting into wedges. Repeat for the remaining three tortillas.
